Oatmeal Cranberry Cookies

I'm the best baker...I can bake anything..Not!  Seriously though, I have tried and failed many, many times on oatmeal cookies (More that just oatmeal cookies.... but lets keep that to ourselves)!  You would think that I hadn't baked a day in my life.  On Sunday's we all (my family) gather at my grandparents house for lunch and most times we have my best friends family over as well.  We have a pot luck or sorts and divvy out we all will bring that week.  This past Sunday my Aunt Judy (not really related, but I claimed her), made these wonderful cookies, and I just couldn't pass up the opportunity to get the recipe! Shout out out to Aunt Judy and Thank you for sharing!


Ingrenients:
1 C. Butter, softened (2 sticks)
1 C. firmly packed Brown Sugar
1/2 C. Granulated Sugar
2 Eggs
1 tsp. Vanilla
1 tsp Baking Soda
1 tsp Cinnamon
1/2 tsp Salt (optional)
1 1/2 C. Flour
3 C. Old Fashioned Oats
1 C. Dried Cranberry's or raisins if you like those better :) 
 Celtic Sea Salt


  Preheat the oven to 350 F.   Cream the butter and sugars together.  Add in eggs and vanilla.

 









  Once that is blended well, sift together the flour, cinnamon, salt, and the baking soda.  Add to the butter mixture, and mix that well.

  Stir in oats and cranberry's.  We probably would have had a few more cookies.....had I not eaten some of the batter.....You know you would too!

 
  The scooping of the cookies onto the pan.  I used a small ice cream scoop, it's the perfect size!  Because I have had problems in the past with the cookies spreading so wide that it made one big cookie, I placed them far apart.  I put them about an 1 1/2 to 2 inched apart.  Bake for 10 to 13 minutes.  *Very important part.*  *As soon as the cookies come out of the oven sprinkle a little of the Celtic Sea Salt on the top.*  This brings out the sweetness in the cookie and makes such a HUGE difference.  Remember though, all it takes is a little!  Thank you Aunt Judy for that tip!
